Wild Hedgehog Mushrooms
I’m not sure I want to sell this mushroom variety. I’d rather keep them all to myself and eat every last one.
However…my mission is to share forest delights with my fellow man and I’m not sure there is a more delightful mushroom. They are firm and almost buttery in flavor. The little teeth on the underside of the cap are super cute and tend to fall off in cooking, lending flavor to the entire dish. Hedgehogs are right at home in cream-based sauces, floating around a winter soup, or sitting pretty on a venison steak. They even make great pickles!
